Lemon Crinkles

Another lemon recipe. I know... I'm crazy. No but seriously I thought I would share this recipe with you because after you make those delicious Lemon Supreme Rice Krispies Treats you're going to have leftover cake mix. Instead of tossing that cake mix in the trash make these cookies instead. I promise you will not regret it!

Ingredients
1 egg
1/4 cup butter, softened
8oz. cream cheese
the zest of 1 lemon
the juice of 1 lemon
1 box Duncan Hines Lemon Supreme cake mix
1/4 cup powdered sugar, for rolling

Directions
Preheat oven to 350º F. In a large mixing bowl cream together butter, egg, cream cheese, lemon zest, and juice. Once well combined mix in the cake mix (dough will be very thick and sticky). Drop by tablespoons into powdered sugar and roll around until well coated. Place dough balls 2 inches apart from each other on ungreased cookie sheet. Bake for approximately 12 minutes. Cool on cooling rack and enjoy!


*If you are using the leftover cake mix: use only 6oz. of cream cheese and prepare the same way. Enjoy!
